snack status: chickpea hummus for two

This recipe is for a small batch of hummus, perfect for lunch or a snack. If you have time to soak the chickpeas yourself definitely do, but this is catered to those preparing lunch in a hurry. I created this recipe in a hurry myself and it turned out well so I thought I should share it!

INGREDIENTS
1 can organic chickpeas
Juice of 1 decent sized lemon
Olive oil 2-4 tbsp

1 tbsp tahini
1 clove garlic

1/2 tsp ground turmeric
Pinch ground cumin seeds
Salt and pepper to taste

Serves 2-3 people snack size
Dairy and gluten free



DIRECTIONS
Roughly rinse the chickpeas; it doesn't matter if there's a bit of water left on them. Place in a blender with the other ingredients. Blend until mostly smooth, starting with 2 tbsp of olive oil and adding more if it needs it. You could also add more garlic if you wanted (I just didn't want garlic breath at uni!) That's it! Serve with whatever you like, I added mine to leftovers for lunch with lightly toasted piadina bread but it's also great with carrot sticks or in a wrap.

Served with toasted piadina bread, veggie pattie, avocado, roasted pumpkin and salad.
