Quinoa and rice salad

This salad is super easy, tasty and nutritious. Perfect to pack for lunch, high in protein and packed full of ingredients that will sustain your energy all day!



INGREDIENTS

2 cups brown rice
1 cup red quinoa
2 cans chickpeas
2 cans red kidney beans
1 punnet Roma cherry tomatoes diced
1 bunch broccolini roughly chopped
1/2 bunch parsley finely chopped
1/4 Lebanese cucumber diced
1 Handful of broken walnuts
1/2 cup Raisins
Salt and pepper to taste
Juice of half a lemon




INSTRUCTIONS

Rinse the rice and quinoa then place in a pot of water. Bring to the boil and cook for 25 mins stirring occasionally. While the rice/quinoa cooks, wash and drain the beans and chop up all remaining ingredients. Drain the rice/quinoa and allow to cool. Toss all ingredients together and top with the lemon juice and some extra salt and pepper. Enjoy!
